Simple Mills Banana Upside Down Muffins

I adapted this muffin recipe from a recipe on Simple Mill's website using their Banana Bread and Muffin Mix.

INGREDIENTS

  • 2 tbsp coconut oil, melted and slightly cooled

  • 2 tbsp unsweetened applesauce

  • 2 tablespoons all natural maple syrup OR use this syrup

  • 1 ripe banana, sliced

  • 2/3 banana bread Lara bar chopped up (or any chopped nuts and dates you like)

  • 2 eggs

  • 1 cup water

  • 1/2 tsp cinnamon

  • 1 box Simple Mills Banana Muffin and Bread Mix

STEPS

  1. Preheat oven to 350ºF. Generously spray a 12 cup muffin pan with cooking spray or use silicon muffin cups.

  2. Add 2 tablespoons of coconut oil, 1/2 the cinnamon and maple syrup in a small bowl, and spread at the bottom of each muffin cup.

  3. Arrange the banana slices and chopped larabar over the mixture. Set aside while you prepare the batter.

  4. Whisk eggs, water, cinnamon and two tablespoons of applesauce oil in a large bowl.

  5. Add baking mix and whisk until well blended.

  6. Distribute the batter evenly over all individual muffin cups.

  7. Bake in the oven for 25-30 minutes or until a toothpick comes out clean. For me, it was 27 min but it depends on your oven.

  8. Remove from the oven when ready, let cool for 1 minute and un-mold the muffins onto a cooling rack.

  9. Cool briefly and serve.

Store in refrigerator.

This is what the bottom (which becomes the top) of the muffin looks like. It is the mixture of coconut oil, maple syrup, cinnamon, chopped LARABAR and banana.
