Banana Bread Blondies

These blondies are healthy enough to eat for breakfast. You can make them strict Paleo depending on what type of protein powder you choose.

INGREDIENTS

  • 2 bananas, mashed

  • 3 tbsp unsweetened apple sauce

  • One scoop (or a little over 1 1/2 tbsp) F-Factor Vanilla 20/20 powder (you can use any protein powder you choose, but if it is not vanilla I would recommend adding 1 teaspoon of vanilla extract to the recipe)

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 1/2 cups blanched almond flour

  • 1/4 cup vegan, paleo chocolate chips + approximately 4 squares of HU salty chocolate bar, chopped (you can use any type of chocolate you like here!)

STEPS

  1. Preheat the oven to 350 degrees.

  2. Grease an 8x8 inch pan. I used vegan butter (Miyoko's is the brand) but you can use coconut oil.

  3. In a large bowl, mix together mashed banana and apple sauce.

  4. Add in almond flour, protein powder, baking soda and salt and mix until well combined.

  5. Fold in chocolate chips.

  6. Pour batter into greased pan.

  7. Bake for 14-16 minutes or until edges become slightly golden brown.

  8. Once cool cut into squares. Enjoy!
