Paleo "Corn" Muffins

Let me start by saying these muffins have NO corn. Corn is not Paleo. But taste wise that is what they reminded me of and look at that texture!

Ingredients
6 eggs
a couple pinches of salt
6 tablespoons raw honey
4 tablespoons Ghee, melted
2 tablespoons almond milk. I used Malk brand.
1/2 cup coconut flour, sifted
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
3 teaspoons fresh lemon juice
Steps
Preheat the oven to 400°F and line a muffin tin with baking cups, or use a non-stick silicone muffin cups.
Whisk together eggs, butter, almond milk, honey, lemon juice and vanilla extract in a bowl until smooth.
Mix your sifted coconut flour, salt and baking soda together in a separate bowl.
Add your dry mixture into egg mixture until the batter is combined. Pour batter into lined muffin cups.
Bake until a toothpick inserted into the center comes out clean. For my oven it was exactly 15 minutes.
Wait until muffins are cool before serving. Enjoy!
