Blender Banana Chocolate Chip Muffins

This a very kid friendly recipe (and even baby/baby led weaning if you skip the chocolate chips and honey).


These make a delicious breakfast, snack or dessert. Use silicone baking cups for less mess!

INGREDIENTS

  • 1/2 cup sunbutter

  • 1/2 cup almond butter

  • 2 medium bananas

  • 2 eggs

  • 1/2 teaspoon baking soda

  • 1 teaspoon apple cider vinegar

  • 1/2 teaspoon vanilla

  • 2 tablespoons honey (remove if serving to child < 1 year old)

  • chocolate chips (optional, and as many as you like or don't like)

STEPS

  1. Preheat the oven to 400°F.

  2. Line a muffin pan with silicone muffin cups or grease well. Set aside.

  3. Put all the ingredients into a blender or food processor except the chocolate chips and blend until well mixed.

  4. Fold in the chocolate chips

  5. Pour batter into the muffin pan.

  6. Put a couple of chocolate chips onto the top of each muffin (if using chocolate chips).

  7. Bake 13 minutes. Enjoy!
