BBQ Chicken Pizza

I used Cappello’s “naked” crust and Tessemae’s BBQ sauce. You can find both at Whole Foods.

INGREDIENTS
Rotisserie Chicken, sliced or homemade pulled chicken, fully cooked
1/4 Red Onion
1 tablespoon olive oil
Mozzarella
White Cheddar or Vegan Miyoko's Cheese
Cilantro
Arugula (Optional for serving)
Notes: I did not list quantities for everything because it is a matter of preference.
STEPS
Heat pan on medium to high heat with your olive oil and sauté your red onion until it caramelizes. Set aside.
Toss Chicken in BBQ Sauce, can use store bought rotisserie chicken or make your own pulled chicken.
Spread 1/3 cup bbq sauce over the crust leaving a small border around the sides.
Top with the chicken and sprinkle the sliced red onion over the top. If you want to add a bit of cheese here, go for it! Don’t feel deprived if you don’t do dairy though, it was delicious with Miyoko's Dairy Free (Whole30) Mozzarella.
Bake in the 450-degree oven (follow directions on Cappello’s packaging for baking).
Once finished and golden brown. Sprinkle with the cilantro, cut into slices and enjoy!
