3 Ingredient Paleo Pancakes

I call these 3 ingredient pancakes because the base is made up of just 3 ingredients. If you want to add berries or optional vanilla or cinnamon that makes them more like 4 or 5 ingredient pancakes.

Paleo pancakes are my weekend specialty, but these freeze really well and you can make extra for during the week. Very baby friendly too! They were one of the first solid foods I gave Harper to try.
INGREDIENTS
1 tablespoon coconut oil
1 medium banana
2 eggs
1/3 to 1/2 cup of almond butter
1/3 cup of blueberries and raspberries (optional)
1/2 teaspoon cinnamon (optional)
1 teaspoon vanilla extract (optional)
STEPS
Heat your coconut oil on medium heat in a large non stick skillet.
Mash your banana in a bowl as much as possible with a fork.
Whisk and scrambled your eggs together with your banana.
Add your almond butter a little at a time until your batter reaches consistency you like for pancakes. Mix well.
Add your optional ingredients and mix. I add my berries whole to the batter but if you prefer to mash them and mix well you can.
Pour your pancake batter out into the hot skillet, leaving room in between the individual pancakes.
You may want to lower the heat slightly so the pancakes don't burn.
Watch until you see them bubbling, than flip.
Will likely be about 4 minutes on each side.
Top with the remaining berries and organic maple syrup and enjoy!
Notes: If you don't feel like measuring it is OK! Just add your almond butter until your batter reaches your desired consistency for pancake batter. A little thicker is ok with these pancakes. Also, if it looks to runny for you you can always add almond flour or coconut flour. Add a little flour at a time so they don't become too dry.
