Shrimp Garlic Tomato Stir-Fry

This dish works well if you have a ton of vegetables you want to use. You can really use whatever you have on hand.

If you like spicy, I definitely recommend adding red pepper flakes or serving this with hot sauce.

INGREDIENTS

  • 1 green zucchini, sliced into wedges

  • 1/2 yellow onion, chopped

  • 1/2 green pepper, chopped

  • 2 links of chicken sausage, sliced (I like this brand)

  • Approximately 12 shrimp, peeled

  • 2 tablespoons ghee

  • 2 medium carrots, sliced

  • 1 small head of bok choy, sliced into pieces

  • 2 tablespoons tomato paste

  • 4 cloves of garlic, minced

  • Salt and Pepper to taste

  • 1 teaspoon arrowroot powder

  • 2 tablespoons of toasted sesame oil

  • 1/4 cup cilantro, chopped

  • Optional: toasted sesame seeds for garnish

STEPS

  1. Preheat your wok or large pan then add your ghee.

  2. Add your yellow onion and sauté a few minutes.

  3. Add your green pepper and chicken sausage. Sauté until onions become translucent, about 3 minutes.

  4. Add your carrots and sauté until desired texture is reached. I like softer vegetables so for me it was about 8 minutes.

  5. Bring a separate pot of water to boil. Poach the shrimp. This should take about 2-3 minutes in boiling water but cut into one to be sure it is cooked before you rinse. Once pink and cooked inside, rinse them under cold water and set aside to drain.

  6. Add your bok choy, sauté a few min.

  7. Add your tomato paste, arrowroot powder and minced garlic- sauté about 2-3 minutes. You want your garlic to brown, not burn.

  8. Add salt and pepper through out cooking.

  9. Remove from heat and add your toasted sesame oil and mix.

  10. Optional: top with toasted sesame seeds and chopped cilantro.

Notes: Don't be scared to swap whatever vegetables you prefer or have on hand. Cherry tomatoes, red pepper, broccoli, mushrooms, or spinach are all some suggestions what could be delicious in this dish.
